Spelt Sesame Crackers
Yield: 2 large baking sheets full of crackers, approximately 12 servings – nutritional data below has been assessed based on this
2 cups whole spelt flour
1/3 cup sesame seeds
1 1/2 teaspoons salt
1 1/2 teaspoons baking powder
3 tablespoons olive oil
1 teaspoon evaporated cane juice sugar
7/8 cup water
Preheat the oven to 400 degrees F. Use 2 baking sheets if you have them, to cook them at once.
On a lightly floured surface, roll out 2 pieces of dough to about 1/16-inch and place each rolled-out piece of dough on a parchment lined baking sheet or silicon sheet. I like to score them into cracker-sized pieces with a pizza cutter.
Bake on the middle rack of the oven for 4-5 minutes then flip and bake for an additional 2 to 3 minutes or until golden brown. Remove from the oven and place on a cooling rack. When cool, break into desired size pieces.
This recipe works well using whole wheat or white whole wheat flour.
